Alfalfa sprouts. The word "alfalfa" means best food it is a rich source of vitamins minerals and proteins, e.g. 100mg of the vitamin B17 is contained in 100g of alfalfa sprouts.
I mix Alfalfa seeds with Fenugreek, & Radish, I soak overnight in purified water mixed with a small squirt of liquid seaweed, and sprout in a fine holed colander.(see our Loose Sprouting kit -> Loose Sprouting Kit). Fenugreek has wonderful healing and purifying properties and keeps the alfalfa from clumping together. As seen in the picture Alfalfa can also be grown as a vertical sprout in one of our shallow trays using coconut fibre and liquid seaweed, but beast done as a loose sprout as previously described. The picture shows a mix of Alfalfa and Fenugreek, apart from being a good mix of tastes the Fenugreek sprout, being larger, forces the alfalfa apart so it becomes less dense.
NOTE: Some people have said that Alfalfa sprouts are bad for you & I believe this is where the bad PR originated from. Alfalfa and other legumes contain a non-protein amino acid called Canavanine, large quantities of which can aggravate lupus, and other auto immune disorders (If taken in severe overdose quantities (i.e. 1,000 mg per day for 12 months), L-Canavanine can cause thinning of the blood. Furthermore, it can exacerbate the symptoms of Lupus, a disease where the bodies own immune system starts to attack various organs. Individuals with kidney conditions must consult their physician before taking this substance.) This has been discovered because this particular compound has been synthesised and used to treat various conditions such as pancreatic cancer etc, so what they are saying is that a synthesised component of Alfalfa when taken in extreme quantities may aggravate certain conditions. The substance in question, Canavanine, is concentrated in its highest amount in the seed and decreases in concentration throughout the sprouting process, being water-soluble, the soaking process that we use in our sprouting technique further dilutes this substance, to an even greater extent than if it was rinsed only. Bottom line is this research has no relevance to eating alfalfa sprouts.
