One of the most nutritious & definitely the easiest sprout is the humble green lentil. It is ready for eating after two days sprouting and will keep a week and a half in the fridge, if stored correctly, ready to sprinkle on any salad sandwich or added to a stirfry, one hundred and one uses. This variety is called French or Du Puy Green lentil & is organic, it is smaller than the normal Green lentil and very similar in taste but as you can see from the picture creates a great mix when done together.
The top picture shows the French Lentils by themselves, the two pictures below show the normal Green lentil, which actually looks brown once it has soaked for a couple of days, and the French lentil mixed 50-50.
